De 1875 \u00e0 aujourd\u2019hui, cinq g\u00e9n\u00e9rations se sont transmises un patrimoine de valeurs, de travail et de savoir-faire artisanal qui a fait de La&nbsp;<strong>Casa del Prosciutto \u2013 Alberti 1906<\/strong>&nbsp;une r\u00e9f\u00e9rence en Italie et dans le monde.<\/p>\n\n\n\n<p>Nous avons d\u00e9cid\u00e9 de raconter cette histoire \u00e0 travers les voix de ses protagonistes et de leurs proverbes les plus utilis\u00e9s, \u00e9videmment en frioulan, qui a toujours \u00e9t\u00e9 la langue identitaire de notre territoire.<\/p>\n\n\n\n<p>Des paroles anciennes qui conservent une sagesse et qui, comme l\u2019affinage du jambon, ont travers\u00e9 le temps sans perdre leur saveur.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"cap-2\">Premi\u00e8re g\u00e9n\u00e9ration : Luigi Alberti<\/h2>\n\n\n\n<p>En 1875<strong>, Luigi Alberti<\/strong>&nbsp;ouvre \u00e0 Fagagna une activit\u00e9 de commerce de denr\u00e9es coloniales, de c\u00e9r\u00e9ales, d\u2019\u00e9pices, de charcuteries et de vins.<br>En 1906, son fils&nbsp;<strong>Osvaldo<\/strong>&nbsp;transf\u00e8re l\u2019entreprise \u00e0 San Daniele del Friuli, comprenant son potentiel commercial et introduisant \u00e9galement un service de transport alimentaire avec des charrettes tir\u00e9es par des chevaux.<\/p>\n\n\n\n<p>Le proverbe qui repr\u00e9sente le mieux les sacrifices de ces ann\u00e9es est :<\/p>\n\n\n\n<p><strong>\u201cIl pan di paron al \u00e0 siet crostes.\u201d&nbsp;&nbsp;<\/strong>(Le pain du patron a sept cro\u00fbtes.)<\/p>\n\n\n\n<p>Travailler pour les autres est toujours plus fatigant que travailler pour soi-m\u00eame. Dans les ann\u00e9es 1930, il choisit de tout miser sur le porc, en particulier sur les cuisses des&nbsp;<strong>cochons noirs de Fagagna<\/strong>, posant ainsi les bases du jambon de San Daniele.<\/p>\n\n\n\n<p>Le proverbe qui l\u2019accompagne est :<strong>&nbsp;\u201cA marid\u00e2si si sta ben un m\u00eas, a cop\u00e2 il purc\u00eet si sta ben un an.\u201d&nbsp;<\/strong>(On est bien mari\u00e9 pendant un mois, mais quand on tue le cochon, on est bien pour toute l\u2019ann\u00e9e.)<\/p>\n\n\n\n<p>Le sens est clair : la joie est \u00e9ph\u00e9m\u00e8re, mais les choses concr\u00e8tes et tangibles \u2013 comme la viande affin\u00e9e ou les charcuteries qui assurent le bien-\u00eatre pendant des mois \u2013 ont une valeur plus durable. Mais c\u2019est son \u00e9pouse,&nbsp;<strong>Caterina Castellani<\/strong>, qui donnera le tournant d\u00e9cisif \u00e0 l\u2019entreprise : \u00e0 partir des ann\u00e9es 1950, elle dirige l\u2019entreprise, agrandit les caves et transforme l\u2019osteria en un lieu de d\u00e9gustation d\u00e9di\u00e9 exclusivement au jambon cru.<\/p>\n\n\n\n<p><strong>\u201cOgni m\u00eas si f\u00e2s la lune, ogni d\u00ec si \u2019mpare une.\u201d&nbsp;<\/strong>(Chaque mois, on fait la lune, chaque jour on en apprend une.)<\/p>\n\n\n\n<p>Caterina a su apprendre un m\u00e9tier difficile depuis z\u00e9ro, s\u2019adapter et se r\u00e9inventer, jusqu\u2019\u00e0 devenir le c\u0153ur battant de la famille. Elle a \u00e9t\u00e9 capable de g\u00e9rer une entreprise aussi importante au point que le p\u00e8re de son mari lui en ait laiss\u00e9 l\u2019h\u00e9ritage.
