The most important ingredient has always been\u00a0<strong>San Daniele\u2019s microclimate<\/strong>. It is truly unique, created by the meeting of two winds: the cool air descending from the<strong>\u00a0Friulian Alps\u00a0<\/strong>and the mild breeze rising from the\u00a0<strong>Mediterranean Sea<\/strong>. To complete this natural balance is the\u00a0<strong>Tagliamento River<\/strong>, flowing at the foot of the hill and regulating humidity during the aging process.<br>This unique combination, protected by a European\u00a0<strong>DOP certification<\/strong>, makes Prosciutto San Daniele something no other place in the world could ever create.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"cap-2\">Our Prosciutto House: 250 Meters Above Sea Level, at the Heart of Tradition<\/h2>\n\n\n\n<p>We are located\u00a0<strong>250 meters above sea level, at the top of San Daniele\u2019s hill,<\/strong>\u00a0in the very heart of the historic center. A position unchanged over time, granting us natural and constant ventilation, this air has always shaped the character and flavour of our ham.<br>Whenever climate conditions allow it,\u00a0<strong>we leave the windows of our aging rooms open<\/strong>: the Prosciutto breathe the San Daniele air, are gently cuddled by the winds, and slowly follow their natural aging journey.<br>We do not rush. We do not force.
