We are located\u00a0250 meters above sea level, at the top of San Daniele\u2019s hill,<\/strong>\u00a0in the very heart of the historic center. A position unchanged over time, granting us natural and constant ventilation, this air has always shaped the character and flavour of our ham.
Whenever climate conditions allow it,\u00a0we leave the windows of our aging rooms open<\/strong>: the Prosciutto breathe the San Daniele air, are gently cuddled by the winds, and slowly follow their natural aging journey.
