Within this balance, wine plays a fundamental role: it is not a simple accompaniment, but an element capable of enhancing and completing every dish and moment of conviviality.<\/p>\n\n\n\n<p>When the pairing is right, a dialogue is created in which wine and food enhance each other without ever overlapping. The freshness, structure, and softness of the wine can, in fact, transform the perception of a tasting experience, making it more satisfying.<\/p>\n\n\n\n<p>For us, keepers of one of Friuli Venezia Giulia\u2019s gastronomic symbols, this connection runs even deeper: just like our Prosciutto San Daniele Alberti, wine is an authentic expression of the territory, and when they meet together they create excellence.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"cap-1\">San Daniele Ham and White Wine<\/h2>\n\n\n\n<p>When it comes to wine and San Daniele ham, there is often some confusion. It is one of the oldest native DOC grape varieties, and its presence in Friuli Venezia Giulia dates back to as early as the 1600s.<\/p>\n\n\n\n<p>The Friulano DOC, also known by us Friulians as the <em>\u201ctaj di blanc\u201d<\/em>, is the most widely consumed white wine in Friuli and is deeply rooted in the heart of the people of this land.<\/p>\n\n\n\n<p>In our view, Friulano is the best pairing for Prosciutto Alberti, as it does not overpower its delicacy, but instead accompanies the tasting with its soft, enveloping, and lightly fruity flavour.<\/p>\n\n\n\n<p>Going into more detail, we propose a pairing between the three cuts of our ham Noce, Fiocco, and Stinco and three Friulian wines with different characteristics, carefully selected to best enhance the peculiarities of each cut and offer a harmonious and complete tasting experience.<br><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"cap-3\">The Friulano Wine by Donda and the San Daniele Ham Cut \u201cStinco\u201d<\/h2>\n\n\n\n<p>The Stinco is the sweetest of all 3 cuts and stands out for its natural softness and enveloping flavour profile. Not being protected by the rind, it tends during the first months of its long aging process to absorb a greater amount of salt.<br>For this reason, it expresses its full intensity and finds its highest expression when paired with a dry, structured white wine with good minerality.<\/p>\n\n\n\n<p>The pairing we propose is the Friulano from the historic Azienda Agricola Fedele. Their wine is made from 100% Friulano grapes, coming from the Corno di Rosazzo area within the D.O.C.
